I got this recipe from the Blue Hill Inn in Blue Hill Maine.

1/4 tsp. freshly ground nutmeg
1/4 tsp. ground cinnamon
1/4 tsp. ground allspice
1 tsp. baking soda
1 tsp. baking powder
12 oz. finely grated carrots
12 oz. all-purpose flour
1 tsp. vanilla extract
2 oz. softened unsalted butter
8 oz. softened cream cheese
6 oz. vegetable oil
6 oz. plain whole yogurt
3 large eggs
2 oz. tightly packed dark brown sugar
10 oz. granulated sugar
1/2 tsp salt
9 oz. confectioners' sugar
10 slices

Directions

Cake:

1. Preheat Oven to 350.
2. Grease a 9 x 13 in. cake pan with butter and flour
3. Mix flour, baking powder, baking soda, spices, and salt. Add grated carrots,. Mix well until carrots are coated in flour mixture.
4. In food processor, combine sugar, brown sugar, eggs, yogurt, and oil. Add to flour/carrot mixture and stir until combined.
5. Pour batter into prepared cake pan.
6. Bake for 45-55 minutes.

Cream Cheese Frosting:

7. Beat cream cheese and butter until smooth. Add vanilla, and mix well.
8. With mixer speed on low, add confectioners sugar and beat until smooth.
9. Allow cake to cool before adding the frosting.
