to taste salt and pepper2 loaves cubed, about 11 cups day old bread
1 lb sliced mushrooms
1 ea small dice medium onion
1.5 cups butter
3 tsp poultry seasoning
1-1.5 cup heated chicken broth or vegetable stock
1 bunch sliced, 1/4 inch celery

Directions
Preheat oven to 325 degrees. Melt butter in a large skillet over medium heat. Add onion and celery, and sweat for 2 minutes or until slightly transluscent. Add mushroom and saute for 10 minutes. When mushrooms as cooked, add seasoning and hot broth and toss with bread. Pour into greased cassorole. Bake, covered for 40 minutes. Remove cover and bake additional 5-10 minutes, until golden brown.
