White Chocolate Apricot Bread

Ingredients
4.5 tsp dry active yeast2 cups 95-100 degree warm water
4-5 cups bread flour
1.5 cups chopped dried apricots
1/4 cup sugar
1.5 cups white chocolate chips
1.5 tsp apple pie spice
2.5 tsp ground cardimom
1 ea egg
1 pinch salt
Directions
Measure out ingredients and start by placing yeast in a clean mixing bowl. Add the warm water to activate the yeast and allow to sit for 2 minutes. Add in 4 cups of flour, salt, sugar, and then the spices. Begin mixer on low with a dough hook attachment (2 speed for a kitchen aid) Once a dough ball starts to form adjust consistency with the remaining cup of flour should be slightly tacky but not overly sticky. Mix in apricots and chocolate chips, remove dough hook and allow to rest in the bowl for about a half hour. You should cover the bowl with plastic wrap and the dough should nearly double in size during this time. After resting divide the dough in half and form into loaves. Cut an x in the top of the loaf and allow to rest an additional 15-20 minutes. Preheat the oven to 350 and make an egg wash with the one egg and either a splash of water or milk. Brush the loaves evenly with the egg wash and then bake on a cookie sheet lined with parchment paper. Should bake anywhere from 45 minutes to a little over an hour. the outer crust should be dark brown and the bread itself should sound hollow.
